prep time: 15 min; cook time: 30 min. Escarole isn't sold in stores here in Rexburg or Idaho Falls, but Albertson's said they would special order it in if needed.
Ingredients
| 1/2 | cup bread crumbs |
| 1/2 | lb. ground pork |
| 1/2 | lb. lean ground turkey |
| 1/2 | cup onion, finely chopped |
| 1 | tsp garlic, finely chopped |
| 1/4 | cup currants, dried |
| 2 | T oregano |
| 1 | T olive oil |
| 4 | c low-sodium chicken broth |
| 6 | oz escarole, (1 head cut into 1/2 inch pieces) |
| 15 | oz. kidney beans (1 can), rinsed and drained |
| 1 | small chile pepper, dried and crumbled |
