Super food!
Ingredients
| 2 1/2 | cups lentils (cooked) |
| 1 1/2 | cups quinoa (cooked) |
| 1/3 | c scallions, finely chopped |
| 1/3 | c canola oil |
| 2 | T lime juice |
| 1 | T curry powder (mild) |
| 1/4 | tsp ginger (fresh grated) |
| 1/2 | tsp coriander |
| 1/2 | tsp salt |
in a large bowl, combine all ingredients. Toss to coat. may be refrigerated for up to three days.
