Ingredients
| 1 | T olive oil |
| 1 | c onion, chopped |
| 1 | c mushrooms, sliced |
| 1 | tsp garlic, minced |
| 2 | lb lean pork loin, cut into bite-size pieces |
| 14 | oz. tomatoes, diced (1 can) |
| 1 | tsp italian seasoning |
| 1/2 | tsp splenda, granulated |
| 1/2 | tsp salt |
| 1/4 | tsp pepper |
| 2 | cups quinoa, cooked |
- heat oil in a large skillet over med-hi heat. add the mushrooms, onions, garlic and cook for 3 minutes, or until softened.
- stir in pork, tomatoes, seasonings. cover and simmer on med-low for 10 minutes.
- serve over cooked quinoa.
