great for dinner parties...makes 8 servings
Ingredients
| 2 | lbs chicken breasts, thinly sliced |
| 1/8 | teaspoon salt |
| 2 | tablespoons olive oil |
| 1 | cup onion, halved and thinly sliced |
| 1/2 | cup red bell pepper, thinly sliced |
| 3 | garlic cloves, minced |
| 2 | teaspoons fresh ginger, grated |
| 1/4 | teaspoon red-pepper flakes |
| 3 | tablespoons soy sauce |
| 2 | tablespoons rice vinegar |
| 1 1/2 | teaspoons cornstarch |
| 1 | tablespoon water |
| 8 | large lettuce leaves |
- season chicken with salt and pepper
- heat 1 tablespoon of olive oil over high heat. Add half the chicken; cook, stirring constantly. Transfer to plate. repeat with remaining chicken
- add remaining oil to pan, along with the onion and bell pepper. cook, stirring constantly, about 4 minutes.
- reduce heat to medium; add garlic, ginger and red pepper flakes. cook, stirring until fragrant, 30-60 seconds.
- stir in soy sauce, vinegar and cornstarch mixture (water and cornstarch). remove from heat. add chicken, toss to coat.
- serve in lettuce leaves
