Southwest Chicken (crock pot) Recipe

Makes 10 servings


great for taco salad or dip for chips...super easy preparation.  You can add anything to this: frozen corn, cilantro, lime, hominy, etc.

Ingredients
24oz chicken breasts, frozen
12oz black beans, undrained
12oz white beans, undrained
2cups salsa
Directions
  1. place the 4 frozen chicken breasts in the bottom of the crock pot.
  2. dump both cans of beans and salsa on top of the frozen chicken.
  3. turn the crock pot on high for 3-4 hours or low for 6-7 hours.
  4. take the chicken breasts out and shred them. return to crock pot.
  5. use for dip or taco salad, or eat plain for a yummy thick stew! surprisingly, it's great hot or cold!
